The Week of February 27th

Two things I am SO thankful for this week are: antibiotics and a working fridge! Yes people, we are back in business. I am feeling like new again thanks to the meds and my food is no longer soaking wet and hard to find in an ice chest. Anyways, enjoy this weeks picks. I hope you are doing well.

Chicken and Asparagus Stuffed Crepes

So this recipe calls for store bought crepes, but those are just not up to par for me. I make my own. http://allrecipes.com/recipe/basic-crepes/ Make sure to make enough that you have leftovers for a recipe later in the week. Hey, if you are going to go through all the trouble of making your own crepes, you may as well as use it for two different recipes.

Feta and Herb Stuffed Chicken

Berry Breakfast Crepes
My uncle Greg makes these for me when I go visit and they are wonderful. Picture from All Recipes.

1/2 cup sour cream
1/2 cup cream cheese
Strawberries
Blueberries
Maple Syrup
Powdered Sugar
Lemon Juice

  • Mix together sour cream and cream cheese- set aside
  • Spread 2-3 T. into crepe
  • Top with Berries and roll up
  • Top with a drizzle of maple syrup, powdered sugar and a squeeze of lemon, more berries if desired.

So...it has been one interesting week

So I hate to do this, but I am going to have to skip blogging this week for a few reasons. Now, don't all cry at one, there are plenty of recipes to try from my previous posts :) It all started when my 10 months old had a 104 temp that we could not bring down after her shots for around 5 hours.....so scary!!! Thank goodness that was the end of it and we will not be giving her another shot like that again. So the first reason, I am taking off this week is, I have been really sick for 3 days now......miserable. For a day and a half I had a temp that was basically 102 (unrelated as far as we know to my daughter). It would start to spike, I would get freezing cold and then it would peak and I would be sweating to death. Then came the worst sore throat of my life, along with intense ear pain. I could barely swallow. Long story short, I am now on antibiotics with a double ear infection along with another source of infection too. I still have a low grade temp, but am pretty wiped out from this experience. The second reason is, I am STILL fridgeless!!! Yes, it has been over a week now...whine, whine. But really, I am just grateful to have it back some time this week. With ALL of that being said (sorry for the super long post) I am limited on what I can cook, in combo of being exhausted, equals no post. Anyways, sorry to bore you all. Have a great week. OH, for those of you who know me, I paid it forward tonight to a sweet old man at Red's BBQ. I hope we made his night. :)

Living out of an ice chest

So this morning we discovered that our fridge was warm :( It could be a lot worse, as we all know. But for someone who cooks a lot, it really is an inconvenience. I am hoping to get someone out to fix it soon so we don't have to keep replacing the ice. This is the third time our fridge has gone out and it would make sense for us to get a new one, except this is a newer, more expensive fridge! So frustrating. The good news is that we cover it under our home warranty so it only costs us $55 to fix it. Anyways, I hope you find something to your liking.

Beef Stroganoff

This is one of my husband's favorite meals and I have made several different recipes and this is my favorite. Who doesn't love Paula Deen? Picture from Chaos in the Kitchen.

Panera Bread's Fuji Apple Chicken Salad

This is one of my favorite salads from Panera Bread and I believe one of their most popular. This is a knock off version but seems fairly easy to make.


Quick and Easy Noodle Stir-Fry

These look yummy and easy. Picture and recipe from of course Our best bites.

Teriyaki Chicken Bowls

So this is a repeat, but so my family loves them.

1 cup rice (I use brown, but whatever you prefer)
broccoli
carrots
1 tbls vegetable oil
1 lb chicken cut in strips
1 cup teriyaki sauce (I used Soy Vay Teriyaki)
4 tbls light soy sauce
2 tsp rice vinegar
2 tbls cornstarch
  • Steam veggies
  • Cook rice
  • Mix cornstarch with equal parts water, then add to soy sauce, rice vinegar, and teriyaki sauce in a bowl
  • Brown chicken then add the teriyaki sauce until it thickens
  • Serve with veggies and rice
Chicken Quesadillas

So this one is really open-ended according to your liking. In ours I usually do:

Mexican Blend Shredded Cheese
Shredded Chicken
Black Beans
Red onion
Corn
Cilantro
Top it with Guacamole and Salsa
Even Fresh Veggies would be great in it too!

The week of February 6th

I hope everyone enjoyed at least one thing from last week. My favorite was the coconut chicken I think. If you didn't try it, it is very good with a hint of sweet to it. I posted another recipe from her site this week. Yes, the last two have been on the blog before. But like most of you, I do cook the same things. Enjoy.

Chicken and Mushrooms in a Garlic White Wine Sauce

So this recipe is from Skinny Taste. I was really happy with last weeks recipe from there, so I thought we would try another. If you notice I don't put up many recipes for mushrooms, really only because my husband is not a fan. He always says it is ok as long as he can pick them out, so I assume this would be one he can do that with. Picture and recipe from Skinny Taste.
